
25. 4 – Processing coffees
The quantity of harvested coffee cherries was quite small, so we decided to try two processing methods. The first was the washed process. After washing, we removed the pulp from the cherries and dried them to obtain parchment coffee. Then, we removed the parchment to get the green beans.

25. 5 – Natural Process
We also tried another method called the Natural Process. We placed the harvested coffee cherries on drying racks and let them dry naturally, allowing the beans to absorb sugars from the fruit. After drying, we hulled the cherries to obtain the green beans.

25. 6 – Roasting and Cupping Coffee
We asked a professional coffee grader’s lab to roast our coffee beans and conduct a cupping session. We received valuable advice and a positive evaluation of our coffee.
